Today I tried a salad that I never thought I would try: grilled watermelon. Now I know what you are thinking. How the heck do you grill a watermelon? It is actually quite easy to do and the result is a very interesting, healthy salad. Although I used my Big Green Egg, you can certainly make a grilled watermelon salad on a traditional gas grill.
Here is what you will need to make your grilled watermelon salad:
- One small watermelon: I prefer a seedless, but if you like seeds, go for it.
- A handful of mint (around 1/2 cup)
- Feta cheese crumbles (perhaps about 1/4 cup, but the more the merrier)
- EVOO (fancy acronym for extra virgin olive oil, about 1 tablespoon)
- Balsamic vinegar (I used White Balsamic, but use whatever you like, about 1 tablespoon)
- Salt and pepper to taste.
Heat up your Big Green Egg (or gasser) to around 400 degrees Fahrenheit. While your EGG is heating up, go ahead and lay your melon on a cutting board, grab a trusty sharp knife and make a couple of slices. Think Fruit Ninja where you know have basically two one-inch rounds for watermelon. Make sure you leave the rind on the watermelon as that certainly helps keep some of the moisture within the watermelon.
Now I used my ceramic grid on my EGG and I would recommend not using a cast iron grid. Once your dome temp is around 400 degrees, place the two slices of watermelon on to the grid and closed the lid. Hey, I rhymed. After about three minutes, open the lid, flip the watermelon and close the lid for another three minutes. After a total of six minutes, you will start to see a nice char on both sides of the watermelon. Personally, I wanted a little more char, so I grilled each side for another minute and a half.

Once your watermelon has a nice char, remove from the Big Green Egg and place the two slices on your cutting board. Taking your before mentioned trusty sharp knife, go around the inside of the rind and place your excess rind in the garbage. Quarter the watermelon in to cubes and place in to a salad bowl. You will notice that there is a lot of water oozing from the watermelon, which I simply drained once I placed in to my salad bowl.
Next, take your feta cheese, EVOO and balsamic vinegar and pour on top of your grilled watermelon. Season with salt and pepper and voilà, grilled watermelon salad. At first, the texture of the grilled watermelon salad kind of was strange, but the more I ate of the salad, the more I really enjoyed. Now I did not add the mint to the salad, but I wished I had. Next time, the mint will be sublime.
