This Cheesy Tofu Scramble Will Really Please Ya

When it comes to tofu, I know what you’re thinking, “Oh, no no.”

But don’t. Tofu can be used for so many dishes that can be really delicious.

Back in our South Beach Diet phase, we came across the Tofu Scramble recipe in the first recipe book and we’ve modified it along the way.

Here’s what you will need for our Tofu Breakfast Scramble:

  1. One package soft tofu
  2. 1 tbsp.Extra virgin olive oil
  3. 1 scallion or 1 tbsp. dried onion
  4. 1/2 tbsp. garlic powder
  5. 1/4 tsp. turmeric
  6. 1/4 tsp. smoked paprika
  7. 2 dashes of hot sauce
  8. Handful of cheese
  9. Salt and pepper
  10. 1 large skillet.

Place your skillet on medium heat and drizzle your EVOO in to the skillet. While your oil is heating, wash and cut your scallion.

Once the oil begins to boil (hey, that rhymed) put your scallions or dried onion in to the oil. With a wood spoon or spatula, brown your scallions or onion.

Next, cut an opening in the tofu package and drain out the excess water. Put one paper towel on a plate, open the tofu package and place the tofu on the paper towel. Take one more paper towel and put on top of the tofu.

Gently press down to squeeze a little more water out of the tofu. Once your scallions/onions are ready, simply pick up the tofu and crumble the tofu with your hands in to the pan (hey, another rhyme!).

Mixed the tofu thoroughly with the scallions and onions. Next add your garlic powder, tumeric, smoked paprika and hot sauce.

Continue to stir for approximately five minutes while the tofu begins a slow boil, boiling off the water. Reduce to a low heat.

Next, take your handful of cheese and dump it in to the pan. I prefer pepper jack for the spice, but any cheese is really nice.

The cheese helps to bind the tofu together a bit. Salt and pepper to taste and if you want to get creative like us, try adding some kimchi to your tofu scramble. Mmm mmm good.
